It's possible to hide the File > New Activity Button in CRM?

Good morning Peter. You can do this through javascript or modifying user access permission so it does not create the activities you want to block. look at the file with javascript sdk.navitemsamples.js in the SDK.

There is no standard functionality available in CRM 2011 to hide system activities from the Activity menu. The simplest way is to revoke access to this entities in security roles of users.

But if you are talking about CRM 4.0 there is a unsupported customization available.
