    Is there any way to edit the default text that is generated when using the "Schedule A Live Meeting" button

      Not out of the box - you can only change the URLs the name of the company reflected in the text.  You are definitely not the only one who desires this - theoretically you could write an Exchange event sink to modify the text on the fly.
