I haven't used WHS for over a year and a half now and the homeserver address and port still point to my dynamic IP. I no longer have the server. So how do I unregister this address? I recently have had hackers trying to attack my network via this and need to delete the entry in the DNS Server.

You don't "unregister" the address. You can try resetting your broadband modem; often that will cause your ISP to issue you a new IP address.I'm not on the WHS team, I just post a lot. :)
