  because I deleted the uninstall I really could use the PP3 beta download again (so I can fix this issue) or if someone has it the \$NtUninstallKB968349$ folder in c:\windows

  The beta version has been removed from Connect and giving out files associated with WHS (or any copyrighted material) is against the Terms of Use for the forums.  The only real option left is a Server Reinstallation.  The other possibility would be to install WHS on another box or a VM, go through all of the updates (including PP3 RTM), then copy the missing folder from that install to your server.  Obviously this would be the RTM version and not the beta version, but chances are it would work (although no guarantees of course).
