changing the record color in a grid for crm 2011

How I can give each record in a view a diffrent colour depending on a specific field value.
Like in case of Opportunity I want to give green to 75% and so on...

There is no supported way to do this.

If you had the guids of the gridview entity records you wanted to apply your colors to you could use jQuery to apply them:
$("tr").attr("oid", theGuid).addClass("opportunityGreen");
where theGuid is the guid of the opportunity record you wanted to set, and you have added a css class called .opportunityGreen that sets the row background color to green.
you would also need a javascript function to find records according to your criteria and set the css classes accordingly.
