Assign tasks to a team w/out Server

Goal: to accurately track work done and work remaining on a set of tasks so I can predict finish date. Currently, not tracking financials in MSProj, nor are users entering time into MSProj; just me.
Challenge: I have a pool of 10 resources that jump around between tasks constantly, and work on what they can. I can have some users working on 4-5 tasks"simultaneously", meaning they may allocate hours towards 4-5 different tasks in a given day. This prevents me from assigning resources to particular tasks and sequencing them based on priority and/or dependencies; simply too much variation.
Assigning tasks to a team is optimal, but everything I've read is this isn't possible sans Project Server. I'm running 2010 Standard. So looking for any kludges people have come up with. About the only one I can come up with is to max out a generic resource's availablity to equate to multiple resources. I.e. 5 resources at 70% allocation = 350%. Assign tasks to this one resource...Thanks!

Nymlake --The current solution you are using is the solution I would recommend. Be rest assured that even if you were using Project Server 2010, you would still face the exact same problem. Hope this helps.Dale A. Howard [MVP]
