Can I change "Account" entity name to other name?

Is it possible to change entity's name that come with the vanila?
For example: change the name account to customer, product to project etc without creating a new entity?

Yes you can.
Go to Settings --> Customization --> Double click on the entity you are trying to change the name of --> on the Entity Definition section of the main screen that comes up, modify the Name of the entity to whatever you wish and when done. Publish the entity from the Actions menu and that's how you change the name of the entity.

Kamal, thanks i will try it.
But i have one more question: After the change , will i see the new name on the menu list on the left of the screen (sales,markting,etc) or the name will be changed only in the customization screen? i mean: will the end user see the new name?

of course the change will affect the name displayed on the left menu list and everywhere this entity is shown. The same with any attributes...
