Hi,
With MCITP Server 2008 you have received MCSA: Server 2008. From there you can upgrade to MCSA: Server 2012 with exam 70-417 en then proceed with the two additional Exchange 2013 exams.
You can do 70-341 first and then 70-417 if that works better for you. 70-417 will already provide certification and 70-341 on its own will not provide any certification so whatever works best for you is fine.

The order is designed to already give you certification on your way the MCSE (MSCA: Server 2012) but it is not mandatory to that, you can have your own order. In the end it will deliver the same certfications when you passed all the required exams.
Good luck with the exams!
