You can access your HP MediaSmart Server using Remote Desktop, but there should be no need during normal operation of Windows Home Server to do so to manage IIS.

If you are reasonably familiar with IIS and ASP.Net web sites, then you could likely host another web site. I would recommend you leave the standard web sites alone; put your new site on a different port, or use host headers to redirect to your new site.
As for the administrator password, it's the password you set for the console when you set up your first client PC.
