    I would start with the Self-paced Training Kit http://www.microsoft.com/learning/en/us/book.aspx?ID=11754&locale=en-us 

    Also the Windows Server 2008 Learning Portal http://www.microsoft.com/learning/en/us/training/windowsserver.aspx
