I am trying to recover a single [Outlook] file from my home server.
When I do a recover from the Home Server it seems to perform the task and list the file date on top of a File Manager type page (e.g.: Rich's Files March 9, 2014
The problem is that the files displayed seem to be the current files (both size and dates) and not the files dated to the backup date -- I don't know how fond the recovered dates I put a Lock on the file so I have time to figure out how to recover it

From what the OP describes I believe he's working with the original Windows Home Server Version 1; that version has been unsupported for years, I'm afraid, and I no longer have a functioning version (even in VM) to perform any testing.
In general, though, you would choose to open up a specific backup for a specific drive on your home computer; it would present as a new drive (usually Z:) and you would browse to the file(s) you need. You would then copy what you needed from the backup to another location on your hard drive. It sounds like either the Z: drive isn't presenting properly or the OP is actually opening his C: drive

I am not sure what you have tried to do how. Could you explain step by step and what you see, e.g.
1. OPen dashboard on client -> Computers and Backup -> Select client to restore to -> Restore files or folders for the computer
2. You now get a window " Restore Files or Folders" that wants you te select an available backup to restore from.
3. Select to right backup -> Next
4. New window to Choose a volume. Select volume -> Next
5. New window to Select items to RestoreThen what? Date modified in that window exceeds / is more recent that the date of the backup you selected to restore from?
