The only thing you can do is to use the advanced search option in CRM en there you can select the coloms you want and more. after running your advanced search query you get your list with data. In this view you can select export to excel.
And so you have the coloms and data you need/want in excel.
The mind i just like a parachute, it only works when open.

What are you specifically trying to do? There isn't a supported way to modify the export process. If you are looking for something specific, I would look into writing your own custom process using the CRM and Excel SDKs
