    How can update a field that is not present in a entity's form, with a workflow?

    If you browse down to the bottom of the Update form when specifying which fields that the Workflow Step should update, the last section is called 'Additional Fields' and lists all the fields which are part of the entity but not shown on the form:

    This last section gives the ability to update the 'behind-the-scenes' fields that you may need - hope that helps.

    You can add that field to the form and hide it using Javascript.

    In some cases the are not all the fields in the Additional Fields section. For example there is no "Scheduled Duration" field for a Task (Duration is an Actual Duration).
