My 15 drive Home Server boot disk died. should I join the Beta and build a Vail machine, or rebuild on the current version?

Rebuild the current.Vail is just beta and you cannot upgrade to RTM. I would suggest you rebuild the current version. In no way should you ever consider using the beta version of Vail (or any other OS for that matter) as your only storage area.
