How to lock configuration settings ??

  I have ongoing problems with non-geeky clients clicking something inadvertently with the result that I waste considerable time sorting out the mess. A good example is the ordering of emails.  Normally I have the newest emails at the top in date order, but its far too easy for a user to click in the wrong place and end up with their emails in alphabetic order. I then get an anguished cry to the effect 'I can't find any emails'. Surely there must be a way to lock the settings securely so that its impossible to change them unintentionally.
