Hello,
In the case you will restore the database you will get the database at the moment of backup.

Hi,
Andriy already mentioned that you will get database at the moment of backup but make sure to also perform the following steps:
1. Take latest organization database backup
2. Stop Microsoft Dynamics Asynchronous Service and other services (i.e. Sandbox processing if using CRM 2011) (Go to Start Menu -> Administration Tools-> Services, look for Microsoft Dynamics CRM Asynchronous Service (MSCRMAsyncService) right click on it and select Stop)
3. In SQL Server Restore Database backup, in Options make sure to choose Overwrite the existing database
4. After resorting database backup, make sure to start CRM services
