When I don't check off any of the boxes under Available to Run, does that mean it runs automatically? What is the difference between As on-demand process and not checking them off?

A workflow will run automatically based on whether any of the options under 'Options for Automatic Processes' are set. The two options you've highlighted control:
- 'As an on-demand process'. This determines if the workflow is available in the Run Workflow dialog on a form or view for the entity
- 'As a child process'. This determines if the workflow can be called from another workflow

Yes, that is correct. If you don't select one of those options, it will run automatically based on the options to the right of the ones you listed.
