I see that some people when creating charts have the option to add additional series or category. When I try to create a chart these options are no where to be found.I have included a link below that shows what I am talking about. I also checked to make sure I have the most recent roll ups which I do. But I still don't have these options. Is there a way to fix this, or what am I doing wrong?

5.0.9688.583 is "RTM" = CRM with no rollups of any kind. Which would explain why you have the "out of the box" experience of charts limited to a single series, rather than the ability to add more than one, which was added with UR5
You have only UR8 for your Outlook client, not UR11 or (very recent) UR12. Not required for the functionality you are after, but you are definitely not on the most recent.
This wiki is generally more up to date than the article you linked, by the way, although for such an old version, both are correct:

I assume you're going to the "Charts" tab and then clicking on "New Chart"? Is that correct?Friday, January 25, 2013 4:27 PM

Yes, or by going through customize the system and selecting the entity I want and the charts from within there. I have tried both ways. I do not get the option to add additional series or categories.Friday, January 25, 2013 4:58 PM

If you go to File > Help > About Microsoft Dynamics CRM what build number do you have?

Thanks for your reply, below I have added the build numbers.
Microsoft Dynamics CRM 2011 (5.0.9688.583)
Microsoft Dynamics CRM 2011 for Microsoft Office Outlook with Offline Access (5.0.9690.2243)
I compared these with the website below which suggests I have the most recent Roll Up.
