I've run out of room on my WHS and cant add any more hard drives. I'm planning on swapping a couple of 300gb drives for 1.5tb drives.
whats the best route to take?

The best route is to add the new drive to server storage (use a USB bridge like one of these if you have to), remove the old drive, and physically swap the new drive for the old drive.

so when I add the new drive theres the functionality within WHS somewhere to move the files on the old drive to the new?
whereabouts would that be?

When you remove a drive from server storage in the console, Windows Home Server automatically moves files to other drives that are still in your storage pool.
