Not willing to accept ALL of MS new T&C

I have received an email from MS detailing a whole raft of changes to the T&C of using Windows 10
I am willing to accept the majority but some - involving cortana and edge - I am unwilling to accept
What is the way ahead for people like myself who have paid for Windows Professional
ie) How do I prevent these addons from running permanently ?
