Hi,
A quicker option is to open the user record and select the 'reassign records' option (in 'Actions' if using crmv4.0 or on the 'user' ribbon if using crm2011) then choose another user (or team in crm2011) to assign them to.
Note: this will reassign ALL records irrespective of state so be careful if your user who jumped ship owned a million+ records.

If you want to assign only the queue items to the Sales Queue, log into CRM as the user, open the Queue and re-assign the records. otherwise. Otherwise you can use Advanced find to narrow down the record set and then re-assign those records to the generic sales queue.

Yes you can do that.
Login to CRM as Administrator
1) Open advanced find
2) Select emails and then select owner say equal to <person>
3) Search the records click assign and select the user
You may need to repeat this for all (task, email, fax, etc…)
