A windows 7 machine with visual studio installed should allow you to continue with development for CRM 2011. You can always use a CRM Online instance for development instead of CRM On-Premise deployment.
With a Windows 8 64 bit machine, you can even setup a hyper-v machine and actually have a copy of CRM On-Premise installed along with visual studio so that you can have a CRM and development on the same box. easier for debugging.
