I was wondering how to best handle the following: we would like to view the TASK / EMAIL / FAX category as part of the Activity view. I realize that APPOINTMENTs do not have a Category, but is there some way to display the category for the remaining record types? Since most associated views are at the Activity level, it would be nice to be able to view the category as well.

You aren't going to be able to get where you want to go by using a view. There just isn't any method for displaying a category as a column, I suspect for many reasons but probably key is that it isn't an attribute that is common to all the entities that would be in the view.
Short of either a custom aspx page or a creating a report, I think you are stuck.

Just go into each of the entities and add the Category attribute to their respective My View and the All View.

We already have that set up. The requirement is to view all activities via category. The views where this is required are:
ALL ACTIVITIES, MY ACTIVITIES

I don't think you are going to be able to modify that system view in a supported way. You can create a different System View and filter on that field. Then train the user's to use that view. or set it as the Default view if that option is available after you create it.
