I don't know whether I am missing something but I want to have 2 folders of videos and share both of them with the Xbox 360 but I only want to turn on Folder Duplication for 1 of these folders.
I can create a separate video folder that does not duplicate but how do I then get it to share .

Unfortunately, you can't do that. There are only 3 folders used for streaming media: Videos, Photos and Music. You can't create your own share for media streaming.
The only thing you could do (if you have a Media Cemter PC) would be to create a new share on the server, then have your MC PC watch that share, then use the XBox 360 as an MCE to see that new share. But it will not work through the Media Blades on the XBox 360. (Besides, those will be gone in 48 hours anyway.)
