Creating Shares/folders

I just read a little bit on folders.

I am looking for a little clarification. I am assuming that from a client and connecting to a WHS server using UNC to \\whs\videos I can create a folder under here from a client BUT...when I want to create new share I need to do it from the Console window???

You are correct. Additional shared folders need to be created using the WHS console. Any folders, sub-folders or files within those shares can be created from network PC's providing the user account has the appropriate access to do so. You can view and set this access by editing the properties of each user account, or the properties of each shared folder.
