        I create a  new entity "organisation" and i create a  1:N relationship between the account and my "organisation", where type of behavior is  Parental. 
    I  try create a workflow ,which should at change of fields in the account  change  data in some fields in my"organisation " entity. I cannot access to "organisation" entity fields. How can i do it?

    If the organisation is a sub-record to the account, the workflow will not let you go to it because there could be many organisations to the one account and it will not know which one to update. You may need to resort to coding, depending on your specific requirement.
