Changing which instance of a program handles double-clicked files in Windows Explorer.

Question
-
I run two instances of Excel: E1 (started first) and E2 (started after E1)
When double clicking on an Excel workbook file in Windows Explorer, the file is always opened by E2.
Is there any way to force E1 to open a double-clicked file?
