How to "Hide" Features from the Communicator Client

Hi, brand new install (as of yesterday). We are running standard addition and for our pilot, we only want to use Presence and IM. I've installed the SE version of the software and unchecked any of the extra install options.
Now that we've installed the communicator client on a few desktops there are a few items I'd like to hide. Just getting started, I'd like to remove the "Call" feature as well as the p2p video call feature.
I've looked througth the vast forest of operational procedures online here at Microsoft but haven't found what I'm looking for.

Some of the features can be disabled at the global level, like Live Meeting conferencing, Desktop Sharing, or Dial-In Conferencing. To limit other built-in features like Communicator calling, Video Conferencing, or even IM then you can use Group Policy settings to disable those features on the client themselves.
Assuming you've deployed 2007 R2, here is the Communicator.adm Group Policy template and documentation:

Very Helpful. This addressed most items we were looking for. The one item still outstanding is in Outlook, I'm still seeing a "Call" feature. When I try to use it, it indicates that the feature is not avalable. We'd prefer that the call button goes away all together.
