why workflows and asynchronous plug-ins are not going to work in offline mode(outlook).

Workflows and asynchronous plugins are not supported for offline mode, only synchronous plugins.

They don't work offline because they rely in the CRM Asynchronous Processing Service which is a Windows service that runs on the server. If you are offline you don't have any service that can process asynchronous requests in the client.
