    How can I find out number of answers per particular user in a forum over certain amount of days?

    No easy way to do this today. The closest thing you could do is look at a users list of threads they have contributed to and manually count them up. Or the top answerers box in each forum has the number of answers but it is hard coded to the last 30 days.
