  It depends on how you are retrieving data, for example if you are retrieving data using rest endpoints, it returns 50 data by default per page, but you can look for next pages to fetch more data, whereas in soap it will return you all the data. Queryexpressoin also return only 5000 by default but you can use paging to get more records.
