Hi,
Create your own custom fields and use a plugin to update the new fields based on your business.

You handle it by using Opportunity products..
Each opportunity product can have a seperate shipping date.
Then add the shipping dates to the associated view.
Voila... default functionality :)

Same here... when you create your opportunity you can choose if you want the opportunity to be calculated or you want to write in a value.
Choose calculated.. and then add products to the opportunity.. then your estimated revenue will be summed up on the opportunity based on the opportunity products.

I dont understand Payman.. I see that by using Opportunity products all his requirements are solved...
I wouldnt create fields on the opportunity as this would be too static.. as his opportunities probably is allways different.. and contains X different dates. A requirement like this should allways be a 1-m solution and never a flat structured field based solution.
The best practice way is to use opportunity products and setting up the record create to default "write-in products" which allows you to create a "collective delivery date".
