I would also suggest http://www.microsoft.com/learning/en/us/Exam.aspx?ID=MB2-866&locale=en-us as a precursor to the course Henrik suggests so you become familiar with the more basic customisation features before you move into the more advanced areas.

For a developer you can do
--> Extending Microsoft Dynamics CRM 2011 (This is main paper for developer)
--> Customization (This paper is also for developer)
--> Installation (added advantage, This is main paper for CRM Administrator)
--> Applications (This is main paper for functional consultant)
