Recover Outlook Files from Windows Home Server 2003 storage

Read recent post on this restoring Outlook files from storage. I recently upgraded some home PC's to Windows 7. Thought I had everything backed up correctly on my Windows Home Server 2003 however when I went to restore various files I couldn't find any of my Outlook .pst or .ost files. Perhaps my backups were not configured appropriately (the server lets me restore the D drive but not the C drive and I am sure I backed up both. Any thoughts on how I might recover these Outlook files?
Any assistance is greatly appreciated.

On XP the path is C:\Documents And Settings\<user>\Local Settings\Application Data\Microsoft\Outlook.

Does the C: drive for any of your computers appear in the backups?
Normally those files will be in a hidden folder; on XP it's (from memory) C:\Documents And Settings\<user>\Application Data\Microsoft\Outlook , and on Vista it's C:\Users\<user>\AppData\Local\Microsoft\Outlook .
