Change SMTP addresses for users

Hello, I need help writing a script that can take all the users in an OU and add a 1 or other character to the SMTP domain name of the all SMTP e-mail addresses listed on their account, then I need a another script that can remove the 1 later on. This is for a migration. Thanks!
