does anyone know if there is books that a computer teacher can use to teacher Microsoft word or excel- that gives the lesson and then projects for the students to work on to show they understand the lesson?

These MOS books seem affordable and seem to have have Practice Tasks at the end of each section:

Click on the picture and look at the table of contents. Note that there are standard and advanced versions of the books for Word and Excel.
