Hello,
You can assign all the data from old user to new user and then can disable old user.

Be sure to check the assign cascade option: http://mscrmonline.wordpress.com/2010/04/05/check-and-set-assign-cascade-relationship-behavior-for-microsoft-crm/
The historical activities could be impacted (default setting). If it is not the desired setting - update the assign cascade relationship.
