To make sure that it’s Adobe that causes the crash you can disable all your add-ons and then test to see which causes the crash.

Now test to see if you can open .pdf files correctly. If everything works well, then you just have to keep repeating the Manage Add-on
process until Internet Explorer crashes again. Then you will need to take the last add-on you enabled and disable/uninstall/update the add-on to avoid further problems.
